Catering Kings Recipes: Thanksgiving Dinner

The Catering Kings stopped by The Lynne Hayes-Freeland Show on Sunday to show off some great recipes for Thanksgiving. Be sure to try them out in your home this year!

Chocolate Pecan Pie:
1 (9-inch) unbaked pie shell
2 cups pecan halves
3 large eggs, beaten
3 tablespoons butter, melted
1/2 cup dark corn syrup or molasses
1 cup sugar
2 tablespoons good-quality bourbon
1 cup semisweet chocolate chips
Pinch of Salt
½ teaspoon vanilla extract

Mix all ingredients except pecans in bowl. Lay the Pecans on the bottom of the shell and simply pour the mixture on top. Bake at 375 for 10 minutes then at 350 for 25 minutes.

Pasta Salad
1 lb of Tri color Rotini Noodles
1 ½ cups of Italian Dressing
½ cup medium diced onions
1 Red Bell Pepper diced
1 Orange Bell Pepper diced
1 Yellow Bell Pepper diced
1 bunch of Broccoli Florets diced
1 1lb of cherry tomatoes halved
1 cucumber half moons
1 cup of black olives
½ cup Salad Supreme (or to taste)
¼ cup of olive oil
1 cup of fresh shredded Parmesan cheese

Candied Yams
5lbs of Fresh or Commercial Can of Yams
3 cups sugar
1 cup brown sugar
1/8 teaspoon nutmeg
½ teaspoon cinnamon
1 Tablespoon of lemon juice or ¼ teaspoon of lemon zest
1 teaspoon of vanilla extract
1 cup butter
2 Tablespoon Water

You can cook the Candied Yams for 45 minutes to an hour for the canned, and for fresh about and 1 1/2 hours on 350 degrees.

Cornbread stuffing
3 boxes of 8.5 oz cornbread prepared as directed or 16 oz bag of cornbread cubes
1 large onion
1 large green pepper
3 Celery Limbs
2 Tablespoons dried or branch of fresh parsley
1 cup melted butter
1 teaspoon Poultry seasoning
2 Eggs beaten
2 Cups chicken broth
Salt and Pepper to taste

Greens
1 Smoked Turkey Leg
32 oz chicken broth
1 large onion roughly chopped
2 Tablespoons Garlic
1 Tablespoon White Vinegar
1 teaspoon Red Pepper Flakes
1 Tablespoon Sugar
1 Tablespoon Seasoning Salt
1 Teaspoon Pepper
3lbs Collard Green
3 lbs Kale Greens
1 Head of Cabbage

The greens need to simmer for one hour for a firm texture, but the Catering Kings simmer about 2 1/2 hours on low.

Macaroni and Cheese
1 lb of Elbow Macaroni
2 sticks butter
1 lb of sharp cheddar
1 lb of Colby Jack
1 lb Mozzarella or Provolone
1 lb of Cheese Spread
3 Eggs
1 Can Evaporated Milk
Salt and Pepper to taste

The Macaroni and cheese cooks until hot and bubbly, usually about 40 to 45 mins on 350.

Turkey Marinate
1 Tablespoon of Honey
¼ cup brown sugar
1 teaspoon thyme
1 Tablespoon of Dijon Mustard
1 Tablespoon of Garlic or 1 clove
1 Teaspoon Salt
1 Teaspoon Pepper
¼ Teaspoon Cayenne Pepper
