2 Cups Instant Brown Rice
4 Large Eggs
2 Tablespoons Reduced-Sodium Soy Sauce
1/2 Pound Fresh Snow Peas
1 Red Bell Pepper, thinly sliced
1. Cook rice according to packing directions, omitting salt.
2. Meanwhile, whisk together eggs and soy sauce in small bowl.
3. Spray large non-stick skillet with nonstick spray and set over medium-high heat. Add snow peas and bell pepper; cook, stirring frequently, until vegetables are crisp-tender, about 4 minutes. Add egg mixture and cook, stirring constantly, until eggs begin to set, about 1 minute. Add rice and cook, stirring gently, until heated through, about 2 minutes.
