Tomato Grape Salad Recipe

Representatives from the One World Everybody Eats Foundation stopped by Pittsburgh Today Live on Tuesday to show off this great recipe for Tomato Grape Salad!

Tomato Grape Salad

Seedless white or purple grapes, halved
Tomatoes, diced
Cucumbers, peeled and diced
Feta cheese
Olive oil
Balsamic vinegar
Fresh mint

This is one of those recipes that does not have exact measurements. Depending on how much you want to make, you will use equal parts of grapes, cucumbers, and tomato. Place these together in a bowl. Crumble enough feta cheese on top so that there is enough to cover the entire surface of those ingredients. Now toss together. Pour a little olive oil on top and a splash or two of balsamic vinegar. Add a tablespoon or so of fresh mint. Mix well. This is a refreshing summer salad. Salt to taste.

Note: Vegan and gluten free. The grapes and tomato are an unusual combination, but work really well together. It is delicious. This is a Denise original for sure!
