Bistro 19 Recipes: Salmon, Chilled Asian Noodles

Salmon:

  • 4 6 oz pieces of thick salmon filets
  • ¼ cup vegetable oil

Heat oil in large non stick oven proof pan over medium heat. Sear salmon until golden brown, about 3 minutes. Flip and place in a 350 degree oven, bake until 120 degrees internally with a thermometer, about 5-9 minutes. Serve with sauce and noodles

Caramel soy lime Glaze:

  • ½ cup brown sugar
  • 2 Tbsp water
  • ¼ cup soy sauce
  • 2 limes zested & juiced
  • ½ stick of butter

Simmer brown sugar and water until sugar dissolves, about 90 seconds, add lime juice and soy and slowly whisk in butter. Remove from heat, set aside.

Chilled Asian Noodles

  • 1# chow mein or soba noodles
  • 1 red pepper, julienned
  • 1 green pepper julienned
  • ½ cup shredded carrots
  • 2 Tbsp chopped scallions
  • ½ cup soy sauce
  • ½ cup sweet chile sauce

Boil noodles for 3-5 minutes, drain and rinse with cold water. Toss with vegetables and sauces and serve immediately.
