Braddock’s American Brasserie Recipe: Polish Christmas Soup

Polish Christmas Soup

  • 6oz diced canned tomato
  • 2 qt chicken stock
  • 1lb white beans(pre soaked)
  • 1lg onion julienned
  • 1lb kielbasa or ham
  • 1head of red cabbage
  • 2 sm. diced potatoes
  • 3 fresh tomatoes diced
  • 1c red wine vinegar
  • 1/4c sugar
  • 2oz fresh herbs

1. Soak beans overnight.

2. Place beans, canned tomato, and stock in pot and simmer.

3. Caramelize onions and kielbasa, deglaze with vinegar and add to pot.

4. Add remaining ingredients and simmer on low heat until tender.

5. Season with salt and pepper and serve.
