Market District Recipes: BBQ Beef Tri Tip & Flavored Butters

Grilling season is officially here and the Giant Eagle Market District has some recipes that you'll want to try out tonight!

BBQ Beef Tri Tip

Serves: 2-4 Prep Time: 5 min. Cooking Time: 45 minutes

Ingredients:

  • 1 piece Beef Tri Tip Roast (Fat cap left on)
  • ½ cup BBQ Rub (Recipe listed or another favorite)

Directions:

1. Rub the beef with an ample amount of BBQ rub. Make sure that the entire piece is well coated with seasoning. (for best results allow the meat to sit overnight with the rub on).
2. Preheat the grill or a grill pan.
3. Rub a small amount of canola oil on the meat and place on the hot grill, fat cap side down.
4. Grill for 3 minutes, then flip the meat over and grill for an additional 5 minutes. Then pick up the meat and shift to another part of the grill, cook for another 5 minutes.
5. Move the meat either to the oven (if using a grill pan) or to the top part of a grill (if available)
6. If desired brush the meat with BBQ sauce.
7. Continue to cook the meat for an additional 25-35 minutes.
8. Use a meat thermometer to check for doneness. For medium rare to want the meat to be about 135F.
9. Remove the meat from the grill and allow to rest for about 10 minutes. The meat will continue to cook as it sits and be a perfect medium.
10. After rested thinly slice the tri tip and serve. (Great for sandwiches or just by itself)

Classic BBQ Rub

Makes: 1 ½ cups Prep Time: 5 min. Cooking Time: N/A

Ingredients:

  • ¼ cup Light Brown Sugar
  • 3 tbsp Kosher Salt
  • 3 tbsp Black Pepper
  • 3 tbsp Garlic Powder
  • 3 tbsp Onion Powder
  • 1 tbsp Ground Coriander
  • 2 tbsp Ground Cumin
  • ¼ cup Smoked Paprika
  • 2 tbsp Chili Powder
  • 1 tsp Ground Cayenne Pepper

Directions:

1. Mix all ingredients together in a small bowl.

Customize it with any combination of these additional great BBQ spices:
(don't be afraid to add/remove any spices listed above..)
Lemon/Orange Peel - Dried Oregano - Ancho Chili Powder - Ground Ginger

Root Beer BBQ Sauce

Makes: 2 cups Prep Time: 5 min. Cooking Time: 25 minutes

Ingredients:

  • 1 cup Root Beef
  • 1 cup Ketchup
  • 3 tbsp Yellow Mustard
  • 1 tbsp Hot Sauce (Tabasco, Texas Pete, Red Devil, etc)
  • ¼ cup Molasses
  • ¼ cup Light Brown Sugar
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • ½ tbsp Ground Ginger\
  • 1 tsp Ground Coriander
  • 1 tsp Kosher Salt
  • ½ tbsp Black Pepper

Directions:

1. Place all ingredients into a small sauce pot.
2. Bring the mixture to a boil, stirring occasionally.
3. Reduce the sauce to a simmer and allow to continue to cook for an additional 20 minutes.
4. Remove from the stove and allow to cool, refrigerate and use for up to 7 days.

Parmesan Peppercorn Compound Butter

Makes: 1 cup Prep Time: 10 min. Cooking Time: N/A

Ingredients:

  • 2 sticks Butter, softened
  • 3 tbsp Parmesan Cheese, grated
  • 1 tbsp Lemon Juice
  • 1 tbsp Black Pepper, ground
  • ½ tbsp Kosher Salt
  • 1 tbsp Garlic Powder
  • 1 tbsp Parsely, fresh or dried

Directions:

1. Allow the butter to soften at room temperature.
2. Mix all ingredients into a mixing bowl.
3. Use a fork or a small whisk to blend the butter so all ingredients are incorporated.

 Maple Chipotle Compound Butter

Makes: 1 cup Prep Time: 10 min. Cooking Time: N/A

Ingredients:

  • 2 sticks Butter, softened
  • 3 tbsp Maple Syrup
  • ½ tsp Vanilla Exctact or Bean Paste
  • ½ tbsp Black Pepper, ground
  • ½ tbsp Kosher Salt
  • 3 tbsp Paprika
  • 2 tbsp Chipotle Chili Powder
  • 1 tbs Cayenne Pepper

Directions:

1. Allow the butter to soften at room temperature.
2. Mix all ingredients into a mixing bowl.
3. Use a fork or a small whisk to blend the butter so all ingredients are incorporated.
