Late Night Tailgating: Slow Roast Ribs & Pulled Pork

STEELERS LATE NIGHT "Late Night Tailgating Recipes": Slow Roast Ribs and Pulled Pork

Slow Roast Ribs

Ingredients:
Ribs, 2 racks, pork spice mix oil and thick bbq sauce
Coat ribs in oil and season

Directions:

  1. Preheat oven to 225 degrees.
  2. Season your ribs with, your favorite rib rub, grill seasoning, or simply salt and pepper.
  3. Place ribs, meat side down, in baking dishes.
  4. Cover the baking dishes with aluminum foil and place in the oven.
  5. If you are using small baby back ribs, take out after 3.5 hours. If you are using regular baby back or St. Louis style ribs, then take out after 4 hours.
  6. Drain off the drippings. Flip the ribs over using two spatulas (and an extra set of hands if you have them) so the meat side is up. Be careful, as they may be so tender they fall apart
  7. Put a layer of BBQ sauce on the ribs and return to the oven uncovered for an additional 20-30 minutes.
  8. Remove from oven and serve them up with a side of potato salad and some baked beans.

Pulled Pork

Sweet and tangy describe this mild, family-style BBQ pork. Start with a boneless shoulder roast or substitute a boneless loin roast for a lower fat BBQ.

Ingredients:
3 pounds boneless pork shoulder roast, trimmed
1 package McCormick® Slow Cookers BBQ Pulled Pork Seasoning
1/2 cup ketchup
1/2 cup firmly packed brown
/3 cup cider vinegar
2oz coffee

Directions:

  1. Mix all dry ingredients.
  2. Add all the wet ingredients together , and roll pork into marinade.
  3. Next coat in dry ingredients. place in baking pan and convection bake covered at 325 degrees for 2 and a half hours let rest.
  4. After cool and pull apart add your favorite sauce and serve.
