Texas Chili Recipe with Mexican Rice

Serves: 4

This true Texas Chili doesn't have beans or tomatoes, only beef, homemade chili paste and seasonings. It's the traditional Texas bowl of red. Enjoy!

Ingredients:

2oz dried whole new Mexico dried chillis (6 to8)
1 1/2tsp dried cumin, ½ tsp back pepper, 1tsp kosher salt
5 Tablespoons olive oil, 2 ½ pounds diced beef chuck, 1/3 cup finely chopped white onion, 3 cloves garlic minced, 2 cups beef stock, 2 Tablespoons masa harina
1 ½ tablespoons packed dark brown sugar, 1 1.2 tablespoons distilled white vinegar
Sour cream and lime to garnish
Mexican rice one box cooked in chicken stock and fresh tomatoes
4 tortillas or more as needed, assorted toppings shredded lettuce, cheese, tomatoes , and beans

Preparation:

  1. Place chilis in a skillet and toast over medium high heat 2 to 3 minutes. Next soak in hot water for 15 minutes
  2. Drain the chilis and split to remove the stem and the seeds .place chilis in a blender add1/4 cup of water and the salt black peeper and cumin. Puree mix until a smooth fluid paste forms. Let stand.
  3. Next place skillet on med high heat add oil and sear beef coating on all sides 3 to 5 minutes. Add the pureed mixture and ¼ cup of water.
  4. Next add onion and garlic, scraping the bottom until all is cooked tenderly. Add the masa harina to thicken and cook out 1 to 2 minutes.
  5. Next stir in the brown sugar and vinegar , add more salt and pepper to taste. Check consistency and serve over steamed rice.
  6. Add fresh lime wedges and a dollop of sour cream
  7. Take it one step further and build a fantastic burrito with all the toppings and enjoy away.
