Jambalaya And Mini Muffaleta
Chef's note: This recipe feeds a crowd.
Ingredients:
- 1#shrimp
- 1#chicken diced
- 4 Tablespoons of Creole seasoning
- 2 onions diced
- 2 green peppers diced
- 1 clove garlic 2 tomatoes
- 4 bay leaves
- 1 cup of white rice
- 2 qts. of chicken stock
- 3 Andouille sausage
For the muffaletta:
- Tapenade spread 2 banquettes sliced.
- Spring mix to top sliced ham, Mortadella, salami, Provolone - 4 oz. of each meat.
- Hurricane drink, light rum/dark rum, oj, lime juice, simple syrup grenadine, 2 oz. of each spirit and 1 oz. of each juice shaken and served on the rocks enjoy responsibly.
For the jambalaya:
- Sauté shrimp chicken and sausage in pot until fully cooked. Remove and add onions and 2 tablespoons butter.
- Next add rice, toast briefly to open up the grains. Next add stock and bay leaves simmer rice until cooked part way.
- Next add green peepers and cooked meat to the pot, crush garlic and put it in.
- Next add tomatoes and Creole seasoning, check seasoning add more liquid if it's looking dry.
- Bring everything to a boil and serve hot.
To construct the sandwiches:
- Toast bread until crispy
- Place 1 tablespoon of tapenade mixture on bread. Add lettuce and construct sandwich one slice of meat overlapping at a time.
- Top with cheese and serve while the bread is still warm and crunchy.
