Late Night Tailgating: Buttermilk Fried Chicken And Biscuits

This great recipe from Chef Anthony Marino will be a delicious treat for your friends at your next tailgate party!

This week on "Steelers Late Night," Chef Anthony is making buttermilk fried chicken and biscuits.

Buttermilk Fried Chicken And Biscuits

Ingredients:

  • 6 chicken thighs and 8 drum sticks
  • 1 ½ cups buttermilk
  • 2 ½ cups all purpose flour
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp pepper
  • 1 teaspoon kosher salt
  • 6 tablespoons cold cubed butter
  • ¼ cup shortening
  • ½ cup butter
  • ¼ cup chicken broth
  • 1tbsp sugar
  • 1Table spoon baking powder
  • 1/4 tsp baking soda parsley for garnish

Directions:

  1. Place chicken into bowl, and pour buttermilk over and let marinate ½ to 1 hour. In another bowl mix ½ cup of flour with the parsley, oregano, salt, pepper.
  2. Heat shortening into cast iron skillet1/2 way up. Heat until ready to fry test with flour. When oil is ready roll each piece of chicken into flour mixture and fry until golden brown. Place on baking sheet with rack and finish cooking in oven 350 degrees for 15 minutes.
  3. For the biscuits add 1 cup buttermilk and baking soda along with the baking powder and salt. In another bowl cut the butter and flour together, mix until flour resembles pebbles. Combine the wet and dry and mix. Roll out and cut biscuits to your desire.
  4. Bake at 350 degrees for 15 to 20 miutes. Until golden brown. I personally like to finish them with fresh butter while they are warm. enjoy
