Italian Dishes For Holiday Season

Chef Carl Congelo stops by to show off some great Italian recipes that are perfect for the holiday season!

Italian Style Pork Cutlet

Serves 4

  • 8 medium size pork medallions
  • Fine Bread crumbs-2 C season with garlic powder,dry Italian herbs S&P
  • 1 c flour
  • 4 eggs - beaten
  • 2 lemons and bonnet wrappers or cheese cloth and ribbon
  • 1/2 c grated cheese
  • 1 c veg. oil for frying

Place beaten eggs / flour/ and bread crumbs in separate pie pans.

Coat cutlet on both sides with flour/then both sides with eggs then both sides with bread crumbs.

Heat oil until a few bread crumbs dance on surface. Fry cutlets in oil until light golden on both sides, Drain on paper towels. Place in baking dish and heat in 350 oven for 10 min. to serve.
Cut lemons in half and wrap in bonnet and serve on side of dish. Offer cheese

Italian "Verds" Saute Of Savoy Cabbage/ with Mudika

  • 1 large head of Savoy cabbage cut in 1 inch strips
  • 1/2 c virgin olive oil
  • 2 T paprika
  • S&P to taste
  • 1 T chopped garlic

Place garlic and half of the olive oil in skillet, heat until garlic starts to cook. Add cabbage and balance of oil. Add paprika and s & p. Saute until slightly translucent.

When place on serving dish, sprinkle with Mudika

Serves 4

Mudika

  • 1 c panko bread crumbs
  • 4 T olive oil
  • 1/2 t paprika
  • S&P to taste

In medium hot skillet place olive oil and paprika until paprika starts to dance. Slowly stir in panko and keep stirring until bread crumbs toast lightly and incorporate all of the oil. Add S& P

Italian Bow Ties "Crostoli"

  • 1 1/2 c flour
  • 1 1/2 t b p
  • 1/2 t salt
  • 1/3 c milk
  • 1 1/2 T brandy
  • 1 T sugar
  • 1 T melted and cooled butter
  • 1 t lemon rind
  • 1 yolk
  • Oil to fry
  • Powdered sugar to coat

Makes 40

Combine flour/salt and BP
Place milk / lemon/ yolk/butter in sep. bowl and mix well. Best to do in Food Processor

Roll 1/8 inch thick and cut one inch wide strips and 4 or 5 inches long. Cut slit in middle and tie both sides through(like a bow tie)

Fry until light golden (will darken as cool) place on paper towels . Dust generously with powered sugar before serve. (Approx. 2 inches of oil in pan.
