Don's Appliances Recipe: Cooking With Coffee 101

If you think coffee is only a drink to wake you up in the morning, thing again. Chef Anthony Marino stopped by PTL today to show off some great coffee-inspired recipes!

Truffle Wake Up Call

  • 2oz vodka
  • 2oz frangelico
  • 1oz amaretto
  • 3oz cappuccino

Pulled Pork with Espresso BBQ Sauce

BBQ sauce:

Ingredients

  • 4 tablespoons mashed garlic
  • 4 tablespoons olive oil
  • 1 cup cider vinegar ½ cup soy sauce
  • 2 cups ketchup
  • 2cups honey
  • 2cups espresso 4oz
  • Salt to taste

1.saute garlic in olive oil
2. add remaining ingredients whisking constantly to a simmer about ten minutes. Reduce it down ten more minutes and let cool .

Pulled Pork

Ingredients

  • 1 boneless pork shoulder 4#
  • Salt/pepper
  • 1 tablespoon paprika
  • 1 cup ground coffee

1. Place pork in roasting pan fat side up
2. Coat with seasoning and coffee
3. Roast at 325 degrees uncovered for 3 and a half hours
4. Let meat rest for 15 minutes after to cool
5. Slice down and coat with bbq sauce serve with slaw and enjoy

Mole Chicken

Mole:

  • 8 cloves garlic unpeeled
  • 1 white onion quartered
  • 1tsp black pepper
  • ¼ tsp ground clove
  • 1 /12tsp dried oregano
  • ¼ sp all spice
  • 1tsp Mexican cinnamon
  • 12 ancho chilis stemmed and seeded
  • 10 guajillo chilles stemmed and seeded
  • 1 #ripe plum tomatoes
  • 2 tbsp canola oil
  • 1 ripe plantain sliced
  • 2 tbsp raisins
  • 10 unpeeled whole almonds
  • ¼ cup toasted sesame seeds
  • 2qts chicken stock
  • 1 cup strong ground coffee
  • 3oz Mexican chocolate
  • 1 tbsp salt
  • ½ tsp white sugar

1.toast the garlic and onion in oil until soft medium heat.
2.Toast pepper cloves, all spice,cinnamon, oregano almonds and sesame seeds until aromatic .
3.combine spices with onions and garlic and blend with 1 qt of chicken stock. Set aside
4. next add the chilies in blender with the hot stock and tomatoes pure until smooth.
5. place all in stock pot to reduce by half
6. next add the coffee and sliced plantain add sugar and salt and finish with the chocolate check seasoning and consistency

Pour over chicken and bake at 350 degrees until cooked. Cool and pull apart for dip serve hot or room temp
