Market District Recipes: Tzatziki & Greek Salad

Tzatziki

Makes 2 cups Prep Time: 15 min.

Ingredients:

  • ½ each Seedless Cucumber, shredded
  • 1 cup Greek Yogurt
  • 1 each Garlic Clove, minced
  • 2 tbsp Fresh Dill, minced
  • 2 tsp Fresh Mint, minced
  • 2 tsp Red Wine Vinegar
  • 1 tbsp Kosher Salt
  • ½ tsp Cumin (optional)

Directions:

1. Drain the liquid from the cucumber, but do not squeeze.
2. Combine all ingredients in a small mixing bowl.
3. Refrigerate until ready to serve.
4. Serve as a dip or as a garnish for sandwiches or grilled meats.

Greek Salad

Serves: 4-6 Prep Time: 15 min.

Ingredients:

  • 2 each Heirloom Tomatoes, quartered
  • 1 each Seedless Cucumber, sliced
  • 1 each Red Onion, small, sliced
  • 2 each Red or Green Bell Peppers, sliced lengthwise
  • ½ cup Kalamata Olives
  • ¼ cup Extra Virgin Olive Oil
  • 1 lb Feta Cheese, cut into cubes
  • 4 tbsp Red Wine Vinegar
  • ½ tsp Kosher Salt
  • ½ tsp Black Pepper
  • 1 tsp Oregano
  • 2 each Pita Bread, cut into wedges
  • 2 each Lemons, cut into wedges

Directions:

1. Combine the vegetables and olive in a large bowl.
2. In a small bowl mix together the oil, vinegar, salt, pepper, and oregano
3. Combine the dressing with the vegetables and gently toss.
4. Add in the feta cheese and gently toss.
5. Garnish with toasted pita bread and fresh lemon wedges.
