Chef Bill Fuller's Mountain Pie Recipes

Chef Bill Fuller stopped by PTL to show off some great pie recipes that are perfect for your next camping trip!

Cuban Pie

  • 2 ea. Slices of white bread
  • Mustard and mayo
  • 2 ea. Slices of ham
  • 2 ea. Slices of roasted turkey breast
  • 2 ea. Slices of Roasted Pork Loin
  • 2 ea. Slices of Swiss cheese
  • 3-5 ea. Slices of pickles
  • Soft butter
  • Chipotle Aioli

1. Spread mayo and mustard on the insides of the slices of bread.
2. Layer meats and cheeses accordingly.
3. Spread pickles. Close sandwich.
4. Butter outside of sandwich. Place inside hot mountain pie iron.
5. Place pie in iron.
6. Toast until bread crispy and cheese soft.
7. Eat with Chipotle Aioli.

Roasted Pork Loin

  • 2 # Center cut pork loin
  • Salt and pepper
  • 3 Tbs. Roughly chopped garlic
  • 3 Tbs. Picked fresh thyme, stems reserved
  • 2 Tbs. Kosher salt

1) Dry any juice of pork loin.
2) Place peppercorns in mortar and pestle. Crush. Add garlic and crush.
3) Add thyme and salt and grind to a thick paste. Rub over top of pork loin.
4) If possible, let rest a few hours, if not…
5) Pre-heat oven to 450. Place pork loin in a lightly oiled high-sided skillet.
6) Place in hot oven and immediately turn down to 350 and roast.
7) Cook for 45 minutes to an hour to 160 internal temperature.

Chipotle Aioli

  • 2 ea. Chipotle peppers (with a little of the liquid)
  • 1-2 ea. Garlic cloves
  • Zest and juice of 1 Lemon
  • 1 ea. Egg yolks
  • 1-2 Tbs cold water
  • 1 tsp Salt
  • 1 ½ C. Neutral oil (Canola or Soybean)

1. Place chipotle peppers, garlic, lemon zest and juice, egg yolk, water and salt in blender barrel. Puree.
2. While pureeing, slowly drizzle in blended oil.

Meatball Pie

  • 2 ea. Slices of white bread
  • 2 ea. Thick slices of mozzarella
  • 2 ea. Meatballs, halved
  • 3-4 ea. Leaves basil
  • 1-2 ea. Slices of tomatoes
  • Soft butter
  • Tomato Sauce

1. Place mozzarella on slices of bread.
2. Add meatballs and basil.
3. Add tomatoe. Close sandwich.
4. Butter outside of sandwich. Place inside hot mountain pie iron.
5. Place pie in iron.
6. Toast until bread crispy and cheese soft.
7. Eat with Tomato Sauce.

S'More Pie

  • 2 ea. Slices of white bread
  • Peanut butter (optional)
  • 1 ea. Hershey's Bar
  • 2 ea. marshmallows
  • Soft butter

1. Spread peanut butter on the insides of the slices of bread.
2. Layer chocolate and marshmallows accordingly.
3. Butter outside of sandwich. Place inside hot mountain pie iron.
4. Place pie in iron.
5. Toast until bread crispy and chocolate is soft.
