National Pie Day Recipes: Lemon Chess & Apple Crisp

Today is National Pie Day! So, if you'd like to celebrate, check out these two delicious recipes!

Lemon Chess Pie
Makes: 9" pie
Serves: 8-10

INGREDIENTS:

  • 1 Wholly Wholesome Organic Pie Shell, Gluten Free
  • 6 tablespoons of butter (organic if possible)
  • Zest of 3 lemons
  • ¾ cup, juice of 3 lemons (zest then juice lemons)
  • ½ teaspoon sea salt
  • 1 3/4 cups evaporated cane sugar
  • 1 tablespoon cornmeal
  • 1 ½ tablespoons cornstarch (organic if you can find it)
  • 5 large organic eggs
  • 1 cup whipping cream, or ready prepared whipped topping
  • Lemon slices for garnishing pie

PREPARATION:

Oven: Preheat to 375F
Take out frozen pie shell and place on baking sheet pan.
Melt the butter, and stir in the zest, lemon juice, salt, sugar, cornmeal, cornstarch, and eggs.
Whisk until well combined.
Pour the filling into the pie shell. Cover the edges of pie with aluminum foil, to prevent edges from burning.
Bake the pie in the preheated 375°F oven for 45 to 50 minutes, or until the center is set. The top should be golden brown. Remove the pie from the oven and allow it to cool before cutting and serving.

Apple Crisp Pie

Ingredients:

• 1 9" Wholly Wholesome Organic Pie Shell, Gluten Free
• 5 medium apples of your choice
• 1/2 cup of butter or margarine (1 stick)
• 3/4 cup of evaporated cane sugar
• 2/3 cup of gluten free baking mix flour
• 1/2 tsp of sea salt
• 1 1/2 tsp of cinnamon
• 1/3 cup of chopped walnuts
• 1/4 cup of oat flakes, gluten free

Directions:

1. Preheat oven to 350 degrees.
2. Remove Wholly Wholesome Pie Shell from freezer and place on a cookie sheet.
3. Peel, core and slice apples.
4. Fill pie shell with apples.
5. Sprinkle sea salt on top of apples.
6. In separate bowl, mix together sugar, flour and cinnamon.
7. Slice cold stick of butter into 1/4″ slices and add to sugar mixture. Mix together using a fork until crumbly.
8. Add walnuts and oat flakes to mixture and combine.
9. Pour mixture over apples.
10. Tent aluminum foil over pie, place in oven and bake for 40 minutes.
11. Remove foil tent and bake for an additional 5 minutes or until golden brown.
