Rania's Recipe: Bunny Cake

Easter is only a few days away! With that in mind, Rania Harris stopped by PTL to show off a delicious Bunny Cake recipe!

Bunny Cake

  • Boxed Cake Mix
  • Butterceam (see recipe below)
  • Sweetened Coconut
  • Red Licorice
  • Jelly Beans

Directions:

Bake two 9" round cakes from your favorite cake recipe or cake mix.

One round cake will become the bunny's face, while the other is cut to create two bunny ears and a bow tie.

Position the ears at the top of the round cake, and the bow tie at the bottom, as shown in the colored diagram below.

Use the buttercream (see recipe below) to attach the cake pieces together, then continue frosting the entire cake

Cover the entire cake with shredded coconut. I use pink tinted coconut on the inside of the ears and for all or part of the bow tie.

Finish creating the bunny's facial features using jellybeans or gumdrops, for the eyes and nose and red licorice strings to form the whiskers and his mouth. I also add some jellybeans to the bow tie!

Buttercream:

  • 1½ cups milk
  • 6 tablespoons flour
  • 1½ cups sugar
  • 1½ cups unsalted butter - room temperature
  • 1 tablespoon vanilla extract

Directions:

In a small heavy pot, heat the milk and slowly whisk in the flour. Continue to cook, stirring out all lumps until a paste like mixture forms.

In the bowl of an electric mixer, beat the butter with the sugar until light and fluffy. Gradually add in the milk mixture and continue beating until a light and fluffy buttercream has formed. Beat in the extract and taste for flavoring.
