Chef Palak Patel's Recipe: Spiced Shrimp With Cabbage-Peach Slaw
Chef Palak Patel stopped by PTL today to show off a delicious dish that features some delicious spices!
Spiced Shrimp with Cabbage-Peach Slaw
Ingredients:
- 1 tablespoon olive oil
- 1/2 lime, juiced
- 2 tablespoon fresh chopped cilantro, divided
- 28 (1 lb peeled and deveined) medium shrimp
- 2 garlic cloves, crushed
- 1 teaspoon turmeric
- 1 tablespoon cumin
- 1 tablespoon coriander
- Kosher salt, to taste
- 1/8 ground black pepper
- 1/8 teaspoon cayenne pepper
Cabbage Slaw
- 1/2 head red cabbage, shredded (12 oz total)
- 3 peaches, thinly sliced
- 1 small red onion, sliced into thin strips
- 2 tablespoon olive oil
- ½ cup mint, torn
- ½ cilantro, leaves only
- 1 tablespoon honey
- 1 lime juiced
- Kosher salt, to taste
- Freshly black pepper to taste
Directions:
Add cumin, coriander, turmeric, garlic, lime salt and pepper to shrimp. Mix well. Add olive oil to a pan over medium heat and cook shrimp for 2-3 minutes till slightly pink.
Combine olive oil, juice of 1 lime, mint, cilantro, salt and pepper. Toss with the cabbage, red onion, and peaches.
Plate slaw and add shrimp on top.
