Merante Gifts Southern Italian Cooking: Zucchini & Goat Cheese Tart

Representatives from Merante Gifts stopped by PTL to show off a delicious Italian recipe!

Zucchini & Goat Cheese Tart

  • 1 sheet store bought puff pastry
  • 2 tablespoons butter
  • 2 or 3 medium zucchini, grated
  • ½ medium onion, grated
  • Salt and pepper to taste
  • 1 ½ cups shredded mozzarella
  • 2 cups crumbled goat cheese

In a large skillet, melt butter over medium heat. Add grated zucchini and onion. Add salt and pepper to taste. Stir to thoroughly mix and allow liquid to be absorbed.

Cook until zucchini is tender. Remove from the heat and allow to cool. In the meantime, spray a 10 inch tart pan (with a removable bottom) with cooking spray.

Fit in the puff pastry sheet.

Use the trimmings to fill in any empty spots. Place the mozzarella on the bottom. Put the zucchini mixture on top of the mozzarella and spread to cover the cheese.

Sprinkle the goat cheese crumbles evenly on top of the zucchini. Bake for 30 minutes in 400 degree oven. Make sure the pastry is golden brown on the edges as this will insure a cooked bottom crust.

Serve hot, cold or at room temperature.
