Market District Recipes: Roasted Nuts

Check out these nut recipes you can make all year round, or just for the holidays!

Roasted "Bar-Style" Mixed Nuts

Makes: 4 ½ cups Prep Time: 5 min. Cooking Time: 20 minutes

Ingredients:

1 ½ cup Cashews, raw
1 ½ cup Pecans, raw
1 ½ cup Almonds, raw
2 tbsp Egg Whites (pasteurized)
¾ tbsp Kosher Salt
½ tsp Garlic Powder
½ tsp Onion Powder
½ tsp Black Pepper, course ground
¼ tsp Cumin, ground
¼ tsp Coriander, ground
½ tsp Paprika
¼ tsp Chili Powder

Directions:

1. Place the nuts into a medium sized bowl.
2. Cover the nuts with the egg whites and toss until all nuts are completely covered.
3. Remove the nuts and place them into another medium bowl. (This is done so that the spices don't stick to the bottom of the first bowl)
4. Mix the seasoning into a small bowl and stir together.
5. Add the seasoning to the nuts and toss so the nuts are completely spice covered.
6. Spread the nuts out onto a parchment lined baking sheet.
7. Roast the nuts in a 350F oven for 10 minutes.
8. Remove the nuts from the oven, stir, spread the nuts out and place back in the oven for an additional 10 minutes.
9. Remove from the oven and allow to cool.

Roasted Holiday-Spiced Mixed Nuts

2 tsp Kosher Salt
¼ tsp Cardamom, ground
¼ tsp Nutmeg, ground
¼ tsp Allspice, ground
¼ tsp Ginger, ground
½ tsp Cinnamon, ground
¼ tsp Cayenne (optional)

Directions:

1. Place the nuts into a medium sized bowl.
2. Cover the nuts with the light corn syrup and toss until all nuts are completely covered in the syrup.
3. Remove the nuts and place them into another medium bowl. (This is done so that the spices don't stick to the bottom of the first bowl)
4. Mix the seasoning into a small bowl and stir together.
5. Add the seasoning to the nuts and toss so the nuts are completely spice covered.
6. Spread the nuts out onto a parchment lined baking sheet.
