Easy Valentine's Day Recipe: Arancini (Rice Balls)

Today is Valentine's Day and Gino Chiodo from Izzazu Salon and Spa has a recipe that any man can make for his special somebody. Be sure to give it a try today!

Ingredients

  • 3 cups River rice
  • 6 cups boiling water
  • Salt and pepper
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 5 cups vegetable oil
  • ½ cup sopressata (dice in small cubes)
  • 8 oz. Mozzarella cheese (dice into small cubes)

Other Variations

Pepperoni, Capacolla, cooked Hot Sausage, Peas

Directions

In a saucepan bring water to a boil. Stir in rice. Cover. Reduce heat and simmer for 20 minutes or until all water is absorbed. Transfer it into a bowl, cover with paper towel and let it set for 2 hours. Rice must be dry to maintain a tacky consistency.

Ready to mix:

Take rice and add salt and pepper, to taste. Stir in the beaten eggs, and grated parmesan cheese. Mix together gently with hands.

In a large frying pan over medium heat add oil. Heat to medium high heat.

Dampen hands with water. Take about 4 tablespoons of the rice mixture, place in hand and form a small cup.

Place 1/2 teaspoon of the meat and cheese mixture to center of the rice cup, add 1 teaspoon of the rice over the meat mixture and roll into a ball.

Place gently in hot oil, fry rice balls until golden brown (about 3 to 5 minutes) on each side. Using a perforated spoon remove one by one, and place on a paper towel lined plate or dish.

Garnish using your favorite tomato sauce and enjoy!
