Cooking Corner: Fresh Pasta With Summer Veggies
In this week's Cooking Corner segment, Market District Chef John Gruver stops by with a tasty recipe for fresh pasta with summer veggies!
--Boil fresh pasta in water - al dente
--Meantime, drizzle olive oil in a hot saute pan
--Add fresh chopped yellow squash, zucchini, fresh corn kernels cut off the cob - saute together until soft;
--Add carmelized onions
--Stir together
--Add boiled pasta to the saute pan with the veggies; include a little of the pasta water.
--Add fresh frommage blanc cheese to make a sauce
--Add fresh tomatoes, chopped
--Sprinkle with sea salt or kosher salt and fresh cracked black pepper
