Gridiron Grub: Football Fiesta in a Cup

The season of getting together to cheer, jeer and make bite-sized snacks is upon us. Yes, football season is here! Here's a recipe that is sure to be a crowd-pleaser and is perfect for tailgating parties. Rather than making a large bowl of chip dip and having everyone scoop out a spoonful on a little plate, this snack is self-contained, easy to hold and ready to be enjoyed on a nice fall day in a parking lot before the big game or in someone’s living room on a big, comfy couch. 

Layered Mexican Salsa Cup
Prep Time: 20 minutes
Difficulty Level: Easy
Yield: 12 cups

Ingredients:

  • 2 ripe avocados
  • 1 packet of guacamole mix
  • 8 oz. container of sour cream
  • 4.5 oz. sliced black olives
  • 1 jar of salsa
  • 8 oz. bag of shredded taco cheese
  • 1 package of 9 oz. clear party cups
  • Bag of tortilla chips

Directions: 

Make the guacamole mix according to directions on the packet. Then take the party cups and add a scoop each of guacamole, sour cream, black olives, salsa and shredded cheese to top it off. Smooth out each layer after adding. If looking for an additional twist, add a layer of black beans, onions, seasoned meat or shredded lettuce. Refrigerate the cups until ready to serve.

When ready to serve, arrange the cups on a tray or platter. Add one tortilla chip to each cup as a garnish. Do not add a chip to the dip until ready to serve because if added too early, the chip will get soggy.
