Heinz Red Zone: Spicy Beef Quesadillas

STEELERS HUDDLE "Heinz Red Zone Recipe": Spicy Beef Quesadillas

Ingredients:

  • Olive oil
  • 1 ½ pounds lean ground beef
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 3 tomatoes, diced
  • 1 cup Heinz® Jalapeno Ketchup
  • Sea salt and freshly ground black pepper to taste
  • 6 10-inch whole wheat tortillas
  • Olive oil for brushing tortillas
  • 4 cups Monterey Jack cheese, grated
  • Salsa
  • Guacamole

Directions:

In a skillet, heat a small amount of olive oil and brown ground beef. Add the onions and cook until translucent. Add the green pepper and tomatoes and cook for a few minutes. Add the Heinz Jalapeno Ketchup and salt and pepper to taste. Stir and simmer approximately 10 minutes.

Heat a large griddle over medium heat. Brush one side of each tortilla with olive oil. Place two tortillas on the griddle, oiled side down. Scatter one-sixth of the cheese on each. Cook until the bottoms are golden brown and the cheese is melted. Put about one-sixth of the beef mixture on half of each tortilla and fold into a half-moon. Continue to cook until the quesadillas are crisp, turning once.

Repeat to make six quesadillas. Cut into wedges and serve with salsa and guacamole.
