STEELERS HUDDLE "Heinz Red Zone Recipe": Oven-Roasted Barbecued Chicken

For the sauce:

  • 1 cup unsweetened apple juice
  • ½ cup Heinz® Apple Cider Vinegar
  • 1 cup Heinz® Tomato Ketchup
  • 2 tablespoons Heinz® Spicy Brown Mustard
  • 2 tablespoons honey
  • 1 tablespoon Lea & Perrins® Worcestershire Sauce
  • 1 tablespoon hot sauce
  • Sea salt and freshly ground black pepper to taste

Make the sauce:
In a medium saucepan, boil the apple juice and Heinz Apple Cider Vinegar over medium-high heat until reduced by half, 5 to 7 minutes. Lower the heat to medium low and add the remaining sauce ingredients. Simmer for 5 minutes, stirring occasionally. Season to taste with salt and pepper and set aside.

Chicken:

  • 1 tablespoon light brown sugar
  • Sea salt and freshly ground black pepper to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 2 cloves of garlic - minced
  • 6 chicken thighs
  • 6 chicken drumsticks

Directions:
Preheat the oven to 375 degrees.

Combine the brown, sugar, salt, pepper, paprika, chili powder and garlic in a small bowl. Lay the chicken pieces in a large roasting dish and season with the seasoning mixture.

Place the chicken in the oven and roast for 20 minutes, uncovered. Remove from the oven and brush each piece generously with the sauce. Put the chicken back into the oven and continue to roast for another 15 – 20 minutes or until the chicken is cooked through and the juices run clear. Serve immediately and pass the remaining sauce with the chicken.
