Pork Schnitzel Hero With Brussels Sprout Salad With Spatzle & Bacon

Ingredients:
Pork tenderloin - 2 loins pounded into cutlets, marinated
1 ciabatta sliced
Seasoned bread crumbs ½ pound Brussels
8 oz crispy bacon
Braised red cabbage garnish halved cherry toms
4 oz apples canned
6oz spinach baby 2 apples fresh sliced in half moons
6 oz spatzle
4oz favorite vinaigrette
4oz full grain mustard 4 oz horseradish sauce

Preparation:

  1. Boil spatzle and cool. Next sauté bacon and Brussels together until fully cooked. Season with salt and pepper. Fold in sliced apples and vinaigrette. Next add spatzle and refrigerate until serving.
  2. Heat heavy bottomed sauté pan up with 3oz of oil set up breading procedure to pan sear pork cutlets. Pan sear on both sides until golden brown.
  3. Place on sheet tray and finish in the oven on 350 degrees until it reaches an internal temperature of 165 degrees.
  4. Assemble the roll, split down the side add spinach and both spreads. Then place pork cutlets down with the tangy cabbage.
  5. Garnish with cherry tomatoes, pick and cut into portions and feed the crowd.
