Chef Anthony's California Pot Pie

Craving a pot pie? Try Chef Anthony Marino of Don's Kitchen Appliances' new take with a California Pot Pie!

Ingredients:

  • 2 sheets puff pastry dough
  • 1 red onion diced
  • 2 avocados diced
  • 1# roasted turkey diced and seasoned lightly
  • 4oz cherry tomato
  • 16 oz ranch dressing

Directions:

1. First dice all ingredients and place in bowl season with salt and pepper.

2. Toss in ranch dressing and let marinate overnight.

3. Thaw puff pastry overnight as well.

4. Roll puff pastry out on a lightly floured surface.

5. Divide filling in half and distribute evenly placing it in a pile in the center of the pie.

6. Next fold the ends into the pie pointing in, and fold over the sides.

7. Place on sprayed sheet tray and bake at 350 degrees for about 25 minutes or until puffy and golden brown.

Pie Dough

Ingredients:

  • Pie dough
  • 2 and 2/3 cups flour ap
  • 3 tablespoons granulated sugar
  • 1 tsp salt
  • ¾ cup cold unsalted butter
  • 4 Tablespoons vegetable shortening
  • 5 tablespoons ice water
  • 1 tablespoon fresh lemon juice

Directions:

Put flour, sugar, and salt in food processor . pulse briefly.add butter and shortening and pulse until pea size. Drizzle water and lemon juice evenly over the mixture. Pulse until dough comes together.

Dump out onto work surface.and kneed until full incorporated. Divided dough in half and wrap tightly . chill until needed.
