Bella Frutteto Recipe: Apple Ravioli
Bella Frutteto owner Jeff Rook stopped by PTL to show off a delicious apple ravioli recipe!
Apple Ravioli
- 1 package of your favorite cheese ravioli, we use Giovanni Rana Quattro Formaggi
- Amaretto Apples (recipe follows)
- Balsamic Roasted Figs (recipe follows)
- ½ cup golden raisins
- 1 cup (2 sticks) butter
- ¼ cup chopped fresh sage
Fill a large pot with water and put on stove over medium heat. In the meantime, prepare the balsamic roasted figs and amaretto apples.
Balsamic Roasted Figs
- 1/8 cup balsamic vinegar
- 1/8 cup olive oil
- ½ pound dried figs, stem removed and quartered
- Vegetable pan spray for coating pan
Preheat oven to 350 degrees. Pour balsamic vinegar into a food processor or blender turn on medium speed and slowly pour in olive oil, blend to emulsify.
Place quartered figs into medium sized bowl add the vinegar-oil mixture and toss.
Line a sheet tray with parchment paper and heavily coat with a vegetable cooking spray.
Place the figs onto sheet tray and bake for 5-6 minutes. Set aside to cool.
Amaretto Apples
- 2 Granny smith apples cored, cut into 8 wedges and slice thin
- ¼ cup amaretto liquor
- 1/8 tsp cinnamon
- Pinch of nutmeg
- Pinch of allspice
In a small skillet over medium-low heat, add the amaretto and all 3 spices and cook until liquor mixture reaches a thick syrup consistency. Add the sliced apples and sautéed for only a few minutes or until apples are tender. Set aside to cool.
Once the balsamic roasted figs and amaretto apples are cooled. Bring the pot of water to a boil and add ravioli, cook according to package directions. In the meantime, place butter into a large skillet over medium-low heat, melt and add chopped sage. Cook for just a minute and add your roasted balsamic figs and amaretto apples. Once the figs and apples are thoroughly heated, toss in the golden raisins and cook for another 1-2 minutes. Remove from heat and add your cooked ravioli.
