Carmi Restaurant Recipes: Cranberry Seafood Coulis & Crab Stuffing Cakes
Now that Thanksgiving is over, it's time to start thinking about other dishes to make for more upcoming holiday parties! Check out these two delicious recipes from Carmi Restaurant, which will be sure to please your guests!
Cranberry Seafood Coulis
- 1-12 oz can Jellied Cranberry Sauce
- 1/2 Cup orange juice
- 2 TB Horseradish Mustard
- 1/4 t Ground cayenne pepper
- 1/4 t Ground ginger
Slowly Melt cranberry sauce and orange juice until smooth consistency over med heat. Add remaining ingredients, stir until smooth.
Crab Stuffing Cakes
- 2 cups of leftover Stuffing
- 2 cups Lump crab
- 2 Eggs Beaten
- 1/4 cup Mayonnaise
- 2 t Seafood Seasoning
- Olive oil and 2 TB Butter
Mix Stuffing and crab together. Mix in Mayo and Seafood seasoning. Stir in eggs. Form into patties and Sautee in a oil and butter coated pan.
