Heinz Red Zone: Manhattan Clam Chowder

STEELERS HUDDLE "Heinz Red Zone Recipe": Manhattan Clam Chowder

  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • 1 cup finely chopped onion
  • 1/3 cup finely chopped celery
  • 1/3 cup finely chopped carrot
  • 1 teaspoon chopped fresh thyme
  • 1 clove garlic ~ chopped
  • 2 tablespoons flour
  • 3 cups tomato juice
  • 1 cup clam juice
  • 1 cup milk
  • ½ cup Heinz Tomato® Ketchup
  • 1 large potato ~ peeled and diced
  • 1 can clams ~ drained
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste

Directions:
Heat the oil and butter in a soup pot set over medium heat. Add the onion, celery, carrot, thyme, and garlic. Sauté, stirring often, for 5 minutes or until softened.

Sprinkle in flour. Cook, stirring, for 1 minute.

Combine tomato juice, clam juice, milk, and Ketchup.

Stir a little juice mixture into flour mixture until flour is incorporated. Stir in remaining juice mixture and add potatoes; bring to a boil.

Reduce heat to low and simmer for 30 minutes, stirring often.

Add clams and cook for 2 to 3 minutes. Sprinkle with parsley and add salt and pepper to taste.
