Soba Noodle Salad With Ginger Peanut Dressing

Ingredients:
- 60 oz buckwheat soba noodles
- 1/4 cup rice vinegar
- 1 Tbsp. fresh ginger
- 2 Tbsp. low sodium soy sauce
- 1 clove garlic
- 1/2 cup peanut butter
- 1 Tbsp. lime juice
- 1 Tsp. fresh lime zest
- 1/2 cup cilantro
- 1 cucumber peeled, seeded and sliced
- 1 small red pepper sliced
- 1 large carrot grated
- 2 Tbsp. chopped peanuts
Directions:
1. cook noodles in boiling salted water drain and rinse under cold water
2. combine peanut butter , vinegar,ginger ,soy sauce,garlic, lime juice,lime zest in bowl and whisk together
3. Toss together noodles, cucumbers, bell peppers and carrots garnish with cilantro and chopped peanuts
