  • 1 ¼ cup confectioners sugar
  • ¾ cup ground almonds
  • 3 egg whites 1 pinch salt
  • ¼ cup sugar
  • 3 drops red coloring


  • optional ¾ cup mascarpone
  • ¾ cup confectioners’ sugar


Sift confectioners sugar with ground almonds and reserve.

Next whip egg whites in mixer with salt gradually add the sugar until meringue stage forms.

Next add half of the mixture into the almond sugar mix stirring gently until mixed. Add flavorings at this point.

Next macaroons can be piped out and placed in a 300 degree oven for 20 to 25 minutes.

Next prepare your filling : I used fresh strawberries and lemon zest and marscpone for this one. You can decide your filling the sky is the limit at this point.
