Bob and Susan’s Peach Burrata Arugula Salad

– Baby Arugula
– Peaches or Nectarines (sliced)
– Burrata
(Optional: Pancetta)

Dressing

  • 1/3 cup Champagne Vinegar
  • 2/3 cup Olive Oil
  • 1 Tsp. Dijon Mustard
  • 1 Tsp. Agave Nectar or Honey
  • 1/4 of an Orange – juiced
  • Salt and Pepper to taste
