Firehouse Chili Cook-Off Winning Recipe
The Giant Eagle Market District and Pittsburgh firefighters from Engine & Truck Co. 8 squared off recently in a chili cook-off. The firefighters won the charity competition with this recipe!
2 large cans diced tomatoes
2 large cans tomato puree
4 bottles chili sauce
2 large cans light kidney beans
3 lbs. Each ground meat & ground pork
3 chopped green peppers
2 chopped small sweet onions
4 chopped hot banana peppers
1 tbs.each salt, pepper, parsley, oregano, cayenne pepper & chili powder
2 tbs. Minced garlic
4 oz better than beef boullion base
Brown meat half way through
Drain grease
Add veggies & garlic
Finish browning meat
Add spices
When you can smell the spices, add the tomatoes, puree, spices and beans
Simmer 1/2 hour
Add beef base
Simmer at least 1 hour more, taste and adjust seasoning to taste
