Carmi Restaurant Recipes: Cranberry Seafood Coulis & Crab Stuffing Cakes

Now that Thanksgiving is over, it’s time to start thinking about other¬† dishes to make for more upcoming holiday parties! Check out these two delicious recipes from Carmi Restaurant, which will be sure to please your guests!

Cranberry Seafood Coulis

  • 1-12 oz can Jellied Cranberry Sauce
  • 1/2 Cup orange juice
  • 2 TB Horseradish Mustard
  • 1/4 t Ground cayenne pepper
  • 1/4 t Ground ginger

Slowly Melt cranberry sauce and orange juice until smooth consistency over med heat. Add remaining ingredients, stir until smooth.

Crab Stuffing Cakes

  • 2 cups of leftover Stuffing
  • 2 cups Lump crab
  • 2 Eggs Beaten
  • 1/4 cup Mayonnaise
  • 2 t Seafood Seasoning
  • Olive oil and 2 TB Butter

Mix Stuffing and crab together. Mix in Mayo and Seafood seasoning. Stir in eggs. Form into patties and Sautee in a oil and butter coated pan.
