Tree Tops Recipes: French Bread Crustini, La Sci Salmon & Lemonade

French Bread Crustini with Ricotta and Pickled Tomatoes
- ¾ cup of sugar for 3 cups of cider vinegar
- Bring to heat until sugar is dissolved
- Add when mixture is cool
- 1 tablespoon of peppercorns
- 1 tsp salt
- 1 crushed garlic glove
- 1 sprig of fresh Thyme
- 1 sprig of fresh Oregano
Cut cherry tomatoes in half- pour pickling juice over tomatoes- refrigerate overnight.
- Ricotta and salt and pepper
Cut the French bread loaf into ¼” think slices on a bias
Drizzle olive oil over them toast in oven.
Spread Ricotta over Crusini place tomatoes on top! Fresh and Simple
La Sci Salmon
- 1 part Kosher salt
- 3 parts brown sugar
Mix dry ingredients together by hand.
Then take Salmon Steak or 6oz portion of Salmon
Place Salmon in baking dish- flesh side up- cover it completely with cure mixture.
Wrap with plastic wrap- place in the refrigerator for 24 hours.
Remove salmon from dish. Rinse under cold water to remove all of the cure mixture.
Place Salmon face down in frying pan over medium heat or on the grill, for 1 minute 30 seconds.
Flip and cook for another minute.
Results are one med cured salmon.
Grilled Lemonade Recipe:
Take 3 lemons and cut them in half
Place face down on the grill- until deep char marks are visible
Allow to cool
Make Simple Syrup:
Equal parts sugar and water- boil until sugar is dissolved.
Squeeze lemons over strainer.
Place the lemon juice in glass measuring cup
Add 2 cups of simple syrup to lemon juice
And then add 4 cups of water to the lemon juice mixture
Serve over ice. Garnish with Mint Leaf and grilled lemon wedge.
