Soba Noodle Salad With Ginger Peanut Dressing

For a healthy food option, try chef Anthony Marino’s Soba Noodle Salad With Ginger Peanut Dressing!

Ingredients:

  • 60 oz buckwheat soba noodles
  • 1/4 cup rice vinegar
  • 1 Tbsp. fresh ginger
  • 2 Tbsp. low sodium soy sauce
  • 1 clove garlic
  • 1/2 cup peanut butter
  • 1 Tbsp. lime juice
  • 1 Tsp. fresh lime zest
  • 1/2 cup cilantro
  • 1 cucumber peeled, seeded and sliced
  • 1 small red pepper sliced
  • 1 large carrot grated
  • 2 Tbsp. chopped peanuts

Directions:

1. cook noodles in boiling salted water drain and rinse under cold water

2. combine peanut butter , vinegar,ginger ,soy sauce,garlic, lime juice,lime zest in bowl and whisk together

3. Toss together noodles, cucumbers, bell peppers and carrots garnish with cilantro and chopped peanuts
