Park Cafe Scone Recipe
Ingredients and directions:
- 4 c Flour
- ¼ c white sugar
- 2 T baking powder (make sure it is a fresh can!)
- 2 t salt
- 1 T fresh orange zest
Mix, then add with machine running.
- ¾ lb. cold butter, diced
Process until in “peas.”
- 1 c heavy cream
- 4 eggs
Put dry ingredients into bowl, form a well, then add wet ingredients. Stir until incorporated.
- 1c dried cranberries that have been tossed with ¼ c flour
Turn onto floured surface, knead until smooth. Roll out to 1-inch thick. Use a biscuit cutter to form scones or break into three pieces and form circles, then use sharp knife to cut into triangles.
Place on parchment-lined baking sheet. Brush with beaten egg.
Bake on upper rack at 350 degrees, turning 1/2 way for 10-15 minutes until golden.
