Mandarin Orange Cups With Lemon Sorbet, Almonds And Pomegranate
Ingredients
- Mandarin oranges
- Pomegranate Arils
- Slivered Almonds
- Pomegranate Juice
- Lemon or Orange Sorbet
Hollow out mandarin oranges with a grapefruit spoon, reserving juice and the segments in a small bowl.
Fill mandarin oranges shells with lemon sorbet and freeze
Heat 1 cup of pomegranate juice and 1 TBSP sugar to boiling and reduce heat to medium and let reduce to a syrup consistency. Stir to prevent burning. May take about 40 minutes to reduce
Cool the syrup and set aside.
When cool, add 2 Tablespoons pomegranate syrup to the mandarin orange segments, and pomegranate arils. Pour over the mandarin orange cups and top with a few slivered almonds.
Pomegranate Citrus Salad With Mint And Vietnamese Dressing
Serves 4
Ingredients
- Vietnamese Dressing
- 2TBSP fish sauce
- 2 TBSP sugar
- 1 clove garlic, minced
- 2 pieces Thai chili, chopped
Salad
- ¾ cup arils from POM Wonderful Pomegranates or ¾ cup POM POMS Fresh Arils
- 2 mandarins, peeled and segmented
- 1 grapefruit, peeled and segmented
- 1 shallot, thinly sliced
- 20 pieces mint leaves, picked and torn
- 3 TBSP Vietnamese Dressing
Preparation
Vietnamese Dressing:
1. Mix well to dissolve sugar and reserve.
Salad:
1. Prepare fresh pomegranate arils, if necessary.
2. Place citrus fruit in a bowl with arils, sliced shallots, and mint leaves.
3. Dress with Vietnamese dressing and plate.
To prepare fresh arils, score 1 large POM Wonderful Pomegranate and place in a bowl of water. Break open the pomegranate under water to free the arils ( seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve ¾ cup of the arils from fruit set aside. ( Refrigerate or freeze remaining arils)
Pomegranate Guacamole
Ingredients
- ½ cup arils from POM Wonderful Pomegranates or ½ cup POM POMs Fresh Arils
- 2 ripe avocados, skin and pit removed
- Zest and juice of 1 lime
- 1 small red onion, finely chopped
- 1 garlic clove, minced
- Kosher salt to taste
- Tortilla chips or pita chips
Preparation
1. Prepare fresh pomegranate arils, If necessary.
2. In a medium-sized mixing bowl, and mash the avocado and mix in the lime zest and juice, red onion, jalapeno and garlic. Season to taste with salt
3. Stir in the arils.
4. Serve with tortilla or pita chips.
Pomegranate , Mandarin Oranges, Pistachios And Greek Yogurt Parfait
Ingredients
- Vanilla Greek yogurt
- Pomegranate Arils
- Mandarin Orange segments
- Pistachios
- Honey
Layer Greek yogurt, pomegranate, mandarin orange, pistachios, drizzle a little honey on the top
