My Mother's Tailgate Stuffed Pizza

Warning this recipe feeds a crowd so call all the troops!

Ingredients:

  • 8oz sliced pepperoni
  • 3 toms sliced thick
  • 2 cups ricotta
  • 1 large onion diced
  • 4 oz diced cooked ham
  • 12oz shredded mozzarella
  • 1 bu basil chopped finely
  • 2 peepers diced
  • 6ea 6oz pizza balls
  • 4oz olive oil
  • 4 oz sliced mushrooms

Directions:

  1. First grab a sheet tray and oil it well and season it with salt pepper and Italian seasoning. Next roll out dough to fit tray should be three balls worth.
  2. Next place dough on tray and start filling, I recommend starting with the meat and the adding the veggies. And topping with the fresh tomato.
  3. After all ingredients are in roll the other three balls out together and use this as the top for your stuffed pizza.
  4. After top is on give a few slits in it to breathe coat with more olive oil and seasonings.
  5. Bake at 375 degrees for 35 to 45 minutes ,or until golden browned and set.
  6. Let rest 15 minutes then slice and serve with Tortellini salad

Tortellini Salad:

Ingredients:

  • 6oz tri-color tortellini cooked and
  • Cooled 1 cucumber sliced and pickled
  • 2 tomatoes diced
  • 2 oz baby spinach
  • 2 oz shaved parm
  • 6 oz vinaigrette

Directions:

  1. Mix all and combine.
  2. Let set up 20 minutes in fridge, then check seasonings before you serve.
