Uncle Charley's Recipes: Holiday Sliders & Sausage Pizza

Holiday Sliders with Brie and Cranberry Sauce

Ingredients:

  • 1 Pkg. Breakfast Sausage Patties
  • 6 Slider Buns
  • 6 pieces of Brie
  • Cranberry Sauce (see recipe below)

Instructions:

1. Cook sausage patties in a skillet until done.
2. Lightly brush slider buns with olive oil and then place under to broiler to toast.
3. Assemble slides by placing a sausage patty on top of the bun followed by a slice of brie cheese and a teaspoon of cranberry sauce.

Cranberry Sauce

Ingredients:

  • 1 Tbsp. Canned Cranberry Sauce*
  • 1 Tbsp. Orange Juice
  • ½ Tsp. Dijon Mustard
  • 2 Tsp. Sugar
  • ¼ Tsp. Fresh Rosemary minced

Instructions:

1. Combine all ingredients in saucepan and heat over medium heat until the sauce begins to bubble.
2. Remove from heat, taste and add more sugar if desired.
3. Serve when cooled to room temp.

*Cranberry sauce with whole berries is best.

Variations:

-Top slider with sautéed mushrooms and swiss cheese.
-Cranberry sauce can be replaced with apricot preserve or apple chutney.
-Add arugula, boston bibb lettuce or baby spinach if desired.

Sausage "Pizza" Appetizer

Ingredients:

  • 3 Links of Sweet Italian Sausage
  • 12 Mini Mozzarella balls
  • 1 Tbsp. Balsamic Vinegar
  • 1 Tsp. Dried Basil
  • ½ Cup Cherry Tomatoes Sliced in Half
  • 1/2 Cup cubed Focaccia (1/2 inch cubes)
  • 2 Tbsp. Olive Oil
  • 4 In. Bamboo sticks or Toothpicks
  • Pizza Sauce (Any will do)

Instructions:

1. Place mozzarella in a small bowl and add balsamic vinegar and basil. Set mozzarella aside until ready to use.
2. Cook sausage links in a frying pan over medium heat until cooked all the way through, should register 160 on a cooking thermometer.
3. Remove sausage from the pan and cool. Once cooled, slice sausage in to small bites, about ½ inch wide.
4. Heat olive oil in a skillet over medium heat. Add cubed Focaccia to the pan and sauté until the focaccia starts to turn golden brown. Remove from pan and place on paper towel allowing excess oil to drain.
5. Assemble appetizer by placing marinated mozzarella on stick followed by tomato slice, sausage and focaccia cruton.
6. Serve appetizer with side of warm pizza sauce for dipping.

Variations:

-Replace tomato slice with green or black olive
-Appetizer can be made gluten free by using any hard cheese at the end instead of bread.
-Add fresh basil leaf if desired.
