Leslie Bonci's Recipes: Super Bowl Snacks
UPMC Dietician Leslie Bonci stopped by PTL today to show off some great recipes for your Super Bowl party!
Spinach Dip
- 1 10 oz package frozen chopped spinach, thawed, drained, squeeze out excess water
- 2 green onions, finely chopped
- 2 cups of plain Greek yogurt
- 1/3 cup reduced fat mayonnaise
- 1 packet Knorr's vegetable soup mix
Combine all ingredients in a blender or food processor.
Serve with cut up vegetables or crackers
Black Bean Dip
- 1, 15 ounce can black beans, drained, rinsed well
- ½ small jar of salsa
- ½ cup plain Greek yogurt
- 1 packet taco seasoning mix and/or chili powder, cayenne, cumin to taste
Combine all ingredients in a blender or mash beans with a fork and mix in all the other ingredients.
Serve with tortilla chips
Chicken Caesar Salad Bites
Mix together:
- 1 pound ground chicken
- 2 Tablespoons Caesar dressing
- 1/3 cup grated Parmesan cheese
- ¼ cup breadcrumbs
- 1 teaspoon lemon zest.
Form into small balls- size of ping pong balls or small ovals, broil or use a grill pan.
When cool, wrap in romaine lettuce leaves and serve
Cranberry Pistachio Bites
- 1 cup chopped dates
- ½ cup honey
- 1 Tablespoon ground flaxseed (meal)
- ½ teaspoon cinnamon
- pinch of salt
- 1-1/2 cups oats, dry
- 1 cup shelled pistachios
- 1 cup dried cranberries
- ½ cup white chocolate chips
Combine dates, honey, flaxseed meal, salt, and cinnamon in a blender and blend until smooth.
Transfer this mixture to a large bowl and add oats, pistachios and cranberries. Stir well and put in the freezer for about 15 minutes to make it easier to roll
Use a spoon and roll into 1 inch diameter balls or ovals, or press into a pan and cut into bars.
