Rania's Recipes: Filet Mignon & Parfait

Valentine's Day is just around the corner and Rania Harris has a couple of recipes that will surely impress your special someone!

Filet Mignon with Stilton Sauce

  • ¼ pound Stilton, softened
  • ½ stick unsalted butter, softened
  • ¾ cup dry white wine
  • 2 teaspoons freeze-dried green peppercorns
  • ½ cup heavy cream
  • 2 teaspoons minced fresh parsley leaves
  • 2 – 6 ounce filet mignons
  • Watercress sprigs, for garnish

Directions:

In a bowl cream together the cheese and the butter until the mixture is smooth. In a saucepan boil the wine with peppercorns until reduced to about 1 tablespoon, add the cream, and boil the liquid until reduced by half. Reduce the heat to moderately low, whisk the cheese mixture, a little at a time, into the cream mixture, and whisk in the parsley. Remove the pan from the heat and keep the sauce warm.

Preheat oven to 400 degrees.

Heat a well-seasoned ridged (oven proof) grill pan over moderately high heat until it is hot and in it cook the filet, patted dry and seasoned with salt and pepper and grill mark them on both sides. Place the pan in the oven and roast the steaks for about 10 minutes for medium-rare meat or to your personal preference. Let the steak stand on a cutting board for a few minutes. Serve with the sauce and garnish with watercress.

Valentine's Day Parfait

  • 1 pound fresh strawberries ~ cut into halves
  • 3 (6-ounce) packages fresh raspberries,
  • 1 ½ cups plus ¼ cup granulated sugar
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons raspberry liqueur
  • 2 ½ cups cold heavy cream
  • 2 teaspoons pure vanilla extract
  • 5 to 6 (3-inch) bakery meringue shells, broken in pieces

Directions:

Combine the strawberries, 1½ cups of the sugar, and the lemon juice into a 10-inch sauté pan. Crush the strawberries lightly with a fork and bring the mixture to a full boil over medium-high heat. Lower the heat and simmer for 10 minutes, stirring occasionally, until the mixture is syrupy. Fold the 3 packages of raspberries and the liqueur into the hot mixture and refrigerate until very cold.

In the bowl of an electric mixer fitted with the whisk attachment, beat the cream, the remaining ¼ cup of sugar, and the vanilla together on medium-high speed until it forms firm peaks.

In parfait glasses, layer a spoonful of the whipped cream, a spoonful of the raspberry mixture, and then a few meringue pieces. Repeat once or twice, depending on the size of the glasses, until the glasses are full, ending with berries and a dollop of cream. Serve immediately or chill for an hour, until ready to serve.

Yield: 8 parfait glasses

Note: Rania always makes full recipe even though this is a romantic dinner for two ~ her children would be furious if she didn't include them on dessert for the next day!
