"Don't Kaffir the Reaper" Vegan Cheesecake Recipe

Ingredients for the Crust:
- 1 1/2 cups walnuts
- 3/4 cups of Medjool Dates
- pinch of Salt
Pulse walnuts in a food processor into crumb sized pieces, sprinkle the bottom of a 9-inch pie pan or springform pan with some walnut pieces to prevent the crust from sticking. Add dates and a pinch of salt to the walnuts in the food processor and pulse until it begins to come together and form a dough. Press into the bottom of the pan and set aside.
Ingredients for the Filling:
- 3 cups of Raw Cashews, Soaked in water overnight and rinsed well
- 3/4 cup of Coconut Oil
- 3/4 cup Agave Syrup
- 1/2 cup Lemon Juice
- 1/4 tsp of salt
- 4-5 Kaffir Lime Leaves
Place all the ingredients for the filling into a high-speed blender. Blend on the highest setting until completely smooth. This could take 5 to 10 minutes. Test the mixture for graininess by rubbing it between your fingers. If needed you can add a Tablespoon of water at a time to facilitate blending. Add no more than 4 Tablespoons total.
Pour over prepared crust, cover with foil or plastic wrap, and place in the freezer for 2 hours to overnight. Thaw for at least 30 minutes before serving. Leftover cheesecake can be stored in the freezer.
